RED VELVET Cutout Cookie Recipe

Nothing says Valentine's like Red Velvet, and these cookies will too!
Ingredients

1 cup unsalted butter, room temperature
4 ounces cream cheese, room temperature
1 cup sugar
1 egg yolk, large
2 teaspoons vanilla extract
1 tablespoon red food coloring
3 cups all-purpose flour
¼ cup corn starch
¼ cup unsweetened cocoa powder
½ teaspoon kosher salt
TOOLS
Large mixing bowl
Electric mixer or stand mixer
Rolling pin
Cookie cutters (heart shapes work great for Valentine’s)
Parchment paper or silicone baking mats
Baking sheet
Wire cooling rack
Red Velvet Cutout Cookies
Step 1: Let's get started
Place the butter, cream cheese, and sugar in a large mixing bowl and beat on medium-low speed about one minute until smooth.
Add the egg yolk, vanilla extract and food coloring and mix on medium speed until combined. Don't over mix.
Step 2: Gradually Add Flour to Form Dough
Scrape the bottom and sides of the bowl, then add the flour, cocoa, cornstarch, and salt.
Mix on medium-low speed until a stiff dough ball forms (about 30 seconds to 1 minute). The dough should gather itself into a ball and come cleanly away from the sides of the bowl. If the dough seems too sticky, try mixing in a little more flour.
Step 3: Chill the Dough for Easier Rolling
Wrap in plastic and chill for at least 30 minutes.
Step 4: Roll Out Dough and Cut Shapes
Roll the dough to 3/16-inch thick between 2 sheets of parchment paper. Remove the top sheet of parchment. Cut shapes. Peel the shapes from the bottom layer of parchment and transfer to the prepared baking sheet.
Step 5: Bake Until Edges Are Lightly Golden
Bake for 12 to 16 minutes, or until set around the edges but still a little soft towards the center.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This prevents breakage and helps them firm up.
