  • Delicious Upside-Down Apple Spice Cake Recipe

If you love the warm, comforting flavors of apples and spices, this upside-down apple spice cake is a must-try. It’s a versatile treat that works beautifully as a cozy breakfast or a delightful dessert. The cake is moist, packed with tender apple slices, and topped with a caramelized, gooey layer that makes every bite irresistible. Plus, it’s surprisingly easy to make, even if you’re not an experienced baker. Whether you want to impress guests or enjoy a special homemade treat, this apple spice cake will quickly become a favorite. Why Choose an Upside-Down Apple Spice Cake? Upside down cakes have a unique charm. The fruit sits at the bottom of the pan while baking, then flips to the top when served, creating a glossy, caramelized topping. This method enhances the fruit’s flavor and texture, making it soft and sweet without losing its shape. Apples and warm spices like cinnamon, nutmeg, and allspice bring a cozy, inviting aroma and taste. This cake combines those elements with a tender crumb that soaks up the caramel sauce, resulting in a rich, satisfying dessert or breakfast option. Ingredients You’ll Need Gather your fresh, quality ingredients. But first find the right pan. This recipe calls for a 9" cake pan, but I use a 9" ceramic pie pan and it works perfectly. It is a little heavy when tipping over, but use what you have. Whatever you choose it should be at least 2" deep. Apples : Choose firm, slightly tart apples. I used my favorite Fuji apples, but might like Granny Smith or Honeycrisp. They hold their shape well and balance the sweetness. Spices : Ground cinnamon, nutmeg, and a pinch of allspice create the classic apple spice flavor. Butter : Salted butter for the caramel topping and cake batter. Brown sugar : For the caramelized topping and sweetness. Flour : All-purpose flour works best for a tender crumb. Baking powder : For leavening. Eggs : To bind the cake. Milk : Adds moisture and tenderness. Vanilla extract : Enhances the flavor. Kosher Salt: Brings out the sweetness in the apples. FOR THE APPLES - Step One 3/4 cup lightly packed brown sugar 1/4 cup butter 1 tsp vanilla extract 1/2 tsp ground cinnamon 1/4 tsp nutmeg 1/4 tsp apple pie spice pinch kosher salt 2 apples, peeled, cored and sliced in quarter-inch thick slices FOR THE CAKE - Step Two Cooking spray 1 3/4 cups all-purpose flour 3/4 tsp baking powder 2 tsp ground cinnamon 1 tsp kosher salt 1/4 tsp ground nutmeg 1/4 tsp allspice 1/2 cup (1 stick) softened butter 1 cup sugar 1/2 cup lightly packed brown sugar 2 large eggs 1 tsp vanilla extract 3/4 cup milk Step-by-Step Preparation Preheat the oven to 350 degrees. Get the mixer out and grease your 9" round pan with cooking spray. Preparing the Apple Topping Peel, core, and slice the apples into thin wedges. Melt butter in a skillet over medium heat. Add brown sugar, vanilla, cinnamon and salt. Stir until it dissolves and forms a syrup, about 2 minutes until it is slightly thickened. Pour the caramel sauce into the pan. Now....layer your apple slices on top of the caramel sauce. Try to cover the entire pan. I cut a few pieces to fill in between the curve slices. Making the Cake Batter Is your oven preheated to 350°F? Excellent. In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and allspice. In another bowl, beat the eggs with the white and brown sugar until light and fluffy. Add eggs one at a time, then add your vanilla extract. Gradually fold the rest of the dry ingredients into the wet mixture until just combined. Add the milk and now we're ready to pour the batter over the apples in the pan. Baking and Serving Bake the cake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 15 minutes. Carefully invert the cake onto a serving plate so the apple topping is on top. Serve warm or at room temperature. It will cut easier when cooled. Optionally top with whipped cream or vanilla ice cream. 🍎 Tips for the Best Upside Down Apple Spice Cake Use fresh apples. Don’t overmix the batter; this keeps the cake light. Let the cake cool 15 minutes before flipping to a cooling rack to prevent the topping from sticking to the pan. For extra flavor, add chopped nuts like walnuts or pecans to the apple topping. 🍎 Storing and Reheating Store leftover cake in an airtight container at room temperature for up to two days or in the fridge for up to five days. Reheat slices gently in the microwave or oven to bring back the warm, gooey texture. ENJOY! www.nancynaigle.com LOOKING FOR ANOTHER YUMMY APPLE RECIPE? • The “Set Yourself Up for Calm” Planner - week one

✨ Week One: December 1–7 ✨ Goal:  Get the basics handled early so you can enjoy  the season instead of chasing it. December 1 – Clear the Decks (15 minutes) Pick one small thing that’s been weighing on you — a cluttered counter, a pile of mail, the kitchen table — and get it tidy.A clean spot to breathe goes a long way. December 2 – Write Your “Musts” List Not the whole holiday.Just the things that matter most to you .Three to five items, max: a tradition, a gathering, a quiet moment. December 3 – Gifts: Round One Write down who you’re buying for this year.Right beside each name, jot one simple idea.(And remember: eBooks make wonderful last-minute gifts.) December 4 – Pantry Check Peek in your pantry and freezer.Write what you already have, then make a tiny list of what you still need for holiday baking or weeknight suppers. December 5 – Self-Care Catch-Up A walk, a long shower, a cup of cocoa on the porch — take twenty minutes that belong only to you . You ’ ll feel that breath of fresh air for days. December 6 – Decor Lite Day Skip the big overhaul. Pick one cozy corner to decorate — I put a red berry wreath on the door. Maybe you'll put a Christmassy-scented candle on the mantle, or put a bowl of ornaments on the table to amp up the holiday vibe. December 7 – Quick Wins Sunday Tie up loose ends: Dig out the Christmas wrapping paper, and make a list of what supplies you'll need. Tape, ribbon, new scissors, gift tags? Send one card. Yes, it's okay to schedule an eCard. Blue Mountain and Jacquie Lawson have beautiful ones. Honestly, I have subscriptions to both and use them year round. They have free trials too. Prep one dinner for the week. Small things. Big relief. Share your ideas in the comments! Set yourself up for calm. xo Nancy www.nancynaigle.com

  • 7-Day Gratitude Walk with Nancy Naigle

DOWNLOAD PDF to PRINT 🍂✨ Let's go on a 7-Day Gratitude Journey! ✨🍂 As Thanksgiving approaches, let’s take a moment each day to reflect on life’s blessings—big and small. Together, we’ll dive into thought-provoking questions, share heartfelt moments, and enjoy tips, recipes, and crafts that make this season special. Let’s prepare our hearts for a holiday filled with thankfulness, connection, and joy. Whether you’re celebrating with loved ones or savoring a quiet day, this journey is for YOU. We will fill the week with gratitude, one meaningful moment at a time. ❤️  Our 7-Day Gratitude Walk Starts Today Day 1: Gratitude for the Present PART ONE of TWO Question/Statement:   What in your life right now fills your heart with gratitude? Tip:   When reflecting on this question, remember that there’s no “wrong” answer. Gratitude is deeply personal and can be found in unexpected places. It’s okay if gratitude doesn’t come easily right now. The fact that you’re seeking it is already a positive step. Gratitude grows with practice and patience. Here are some ideas to get you going: 1. Start Small Think of simple things: the warmth of your morning coffee, a kind word someone said, or the comfort of your favorite blanket. Gratitude doesn’t always have to be tied to grand gestures—it’s often found in the little things. 2. Focus on the Present Moment Pause and take a deep breath. Notice your surroundings—what stands out? It could be the sound of laughter, the feeling of appreciating your job, the quiet, or even the crisp air of the season. 3. Revisit Your Daily Routine Consider your routines or habits that bring stability to your life: a good meal, your favorite book, exercise, or even your commute that gives you time to think. 4. Think About People Who has recently shown you kindness? A friend, family member, coworker, or even a stranger? Gratitude for relationships is one of the most meaningful ways to reflect. 5. Reflect on Your Passions What hobbies, interests, or projects bring you joy and fulfillment? A creative outlet, a job you love, or a cause you’re passionate about might be sources of gratitude. 6. Go Outside Spending time in nature can inspire gratitude for beauty, peace, and the world around you. Look at the sky, the trees, or the sound of birds—small wonders are all around. PART TWO OF TWO Add-Ons: Make these adorable DIY Thankful Place Cards  for your Thanksgiving table. This is sort of a project, but if you get a helper it goes pretty quickly. They are dual purpose because they are completely edible! I wanted you to have time to get the supplies and make them so this...is part of DAY1, but take all the time you need to complete them. This is a picture of the ones I made a few years ago. They were from a FOOD LION advertisement and they were easier than I thought they'd be. My family loved them. SHOPPING LIST:: Nutter Butter Cookies (this will be the body of your turkey) Fudge Stripe Cookies (to make his pretty tail!) Small Pretzel Knots or Choc Covered Flipz (his feet!) Candy Corn (for the beak) Gummy Worms (for the gobbler!) Almond Slivers (for his spiky hair) Small Choc Chips (for the eyes) and white icing to hold it all together. I found the tube frosting easiest to assemble, but you can use canned frosting and a butter knife to get the same results. Look at the picture and get creative! Add-Ons: Or another option that doesn't require shopping, or sweets. Write a thank you card for someone. Mail it, drop it off on their doorstep, slip it into a lunchbox or tuck it under a pillow. You'll enjoy remembering how grateful you are to them, and they will be joyful to be recognized in an unexpected way. I truly hope you enjoyed our day together. I look forward to touching base tomorrow. Want to hop ahead to Day Two now? https://www.nancynaigle.com/post/7-day-gratitude-walk-day-two I'm so grateful we are friends. • Perfecting Crispy Ginger Cookies

Hey y'all! Nancy here again. There’s something truly special about the smell of ginger cookies baking in a warm kitchen. It’s a scent that wraps around you like a cozy quilt on a chilly evening, reminding you of family gatherings, second chances, and the simple joys of small-town life. Perfecting crispy ginger cookies is an art that blends tradition, faith, and a little bit of southern hospitality. Whether you’re baking for a church potluck, a family reunion, or just a quiet afternoon with a good book, these ginger cookie baking tips will help you create treats that are as delightful as a heartfelt story. The Heart of Ginger Cookies: Ingredients That Make a Difference When it comes to baking ginger cookies, the ingredients you choose are the foundation of your success. Southern kitchens often rely on pantry staples, but the quality and balance of these ingredients can turn a good cookie into a perfect one. Fresh Ground Spices : Ground ginger, cinnamon, and cloves should be fresh. Old spices lose their punch and can make your cookies taste flat. Molasses : This is the soul of a ginger cookie. Use unsulfured molasses for a rich, deep flavor that sings with every bite. Butter vs. Shortening : Butter adds flavor and richness, but shortening can help with crispiness. A mix of both can give you the best of both worlds. Sugar : Brown sugar adds moisture and chewiness, while granulated sugar helps with crisp edges. Adjusting the ratio can help you find your perfect texture. Using these ingredients thoughtfully will set you on the right path to baking cookies that bring warmth and joy to your table. Freshly baked ginger cookies are so delicious! Ginger Cookie Baking Tips for That Perfect Crunch Achieving the perfect crispy texture in ginger cookies is a bit like crafting a good story - it takes patience, attention to detail, and a little know-how. Here are some tried-and-true tips to help you get that satisfying crunch every time: Chill the Dough : Letting your dough rest in the fridge for at least an hour helps the flavors meld and prevents spreading during baking. Roll Thin : Thinner cookies bake crispier. Roll your dough to about 1/8 inch thickness for that ideal snap. Use Parchment Paper or Silicone Mats : These surfaces promote even baking and prevent burning on the bottoms. Bake at the Right Temperature : 350°F is usually perfect. Too hot, and the edges burn before the center crisps; too low, and the cookies stay soft. Cool Completely on a Wire Rack : This allows air to circulate and keeps the cookies from getting soggy. These simple steps can transform your ginger cookies from soft and chewy to perfectly crispy, just like grandma used to make. The Joy of Sharing: Baking as a Community Tradition In many small towns, baking is more than just a kitchen activity - it’s a way to connect with neighbors and celebrate faith and family. Ginger cookies often find their way into church bake sales, holiday gift baskets, and Sunday afternoon visits. Baking together can be a beautiful way to pass down stories and recipes from one generation to the next. It’s a chance to teach young ones about patience, kindness, and the joy of giving. Plus, sharing a plate of crispy ginger cookies with a friend or family member can brighten even the cloudiest day. Consider hosting a cookie swap or a baking day with your community. It’s a wonderful way to build bonds and create memories that last a lifetime. Cozy kitchen table with ginger cookies and tea ready for sharing How to Store and Serve Your Ginger Cookies for Maximum Enjoyment Once you’ve baked your batch of crispy ginger cookies, you want to keep them fresh and delicious. Proper storage and serving can make all the difference. Storage Tips : - Store cookies in an airtight container at room temperature. - Place a slice of bread in the container to keep cookies crisp longer; the bread absorbs moisture. - Avoid refrigerating, as this can make cookies soft and stale faster. Serving Suggestions : - Pair with a warm cup of tea, coffee, or hot apple cider. - Serve alongside a slice of homemade apple pie or a dollop of whipped cream for a southern-inspired treat. - Use as a sweet topping for ice cream or yogurt. These little touches can turn your ginger cookies into a centerpiece of hospitality and comfort. Bringing It All Together: A Crispy Ginger Cookie Recipe to Try Today If you’re ready to bake your own batch of crispy ginger cookies, here’s a wonderful crispy ginger cookie recipe that captures the essence of southern baking. It’s easy to follow, uses simple ingredients, and yields cookies that are perfectly crisp with just the right amount of spice. Remember, baking is as much about the love and intention you put into it as it is about the ingredients. So take your time, enjoy the process, and savor the moments shared over these delightful treats. A Warm Invitation to Bake and Share Baking crispy ginger cookies is more than just making a sweet treat. It’s about creating moments of joy, sharing stories, and embracing the blessings of community and family. Whether you’re a seasoned baker or just starting out, these ginger cookie baking tips will help you craft cookies that bring smiles and warmth to every gathering. So, pull out your mixing bowls, gather your ingredients, and let the aroma of ginger and molasses fill your home. There’s a special kind of magic in baking that brings hearts together, and these cookies are a perfect way to share that magic with those you love. Hugs and happy holiday baking! • 10 Simple Tips to Take the Stress Out of Thanksgiving

Thanksgiving has a way of sneaking up on us, doesn’t it? One minute we’re sipping pumpkin-spice lattes, and the next we’re wrestling a turkey the size of a small child. But this year, you don’t have to let the holiday run you ragged. With a little planning and a whole lot of grace, you can enjoy a Thanksgiving that feels peaceful, meaningful, and downright lovely. Here are ten simple ways to make your holiday lighter and more joyful. 1. Start with a Realistic Plan Before the rush kicks in, jot down what matters most to you . Not what you think you “should” do. Not what everyone else "expects" of you. Pick the handful of things that truly make the day special, and write them down in ink. Let the rest fall away...or if you must, write them in pencil at the bottom to remind yourself they are optional. Trust me, Thanksgiving will not be ruined if you can't make Aunt Birdie's sweet potato pie. A calm heart starts with a clear plan. 2. Keep Your Menu Manageable You don’t need six casseroles and three pies to prove your love. Choose dishes you enjoy making and that won’t keep you chained to the stove. If Grandma’s sweet potato casserole is non-negotiable, great. But the rest? Make it simple. 3. Delegate Like a Pro Let folks bring a dish, drinks, or dessert, even if you’re the one hosting. People love to contribute. Have a short list of things people can bring or do on hand, so you can give suggestions if asked. You’ll enjoy the day a whole lot more when you’re not juggling every last detail by yourself. 4. Prep Ahead Wherever You Can Chop veggies, bake pies, set the table, and lay out serving dishes the day before. A little work early on makes Thanksgiving morning smooth as gravy. 5. Choose One Corner to Make Cozy Don’t worry about the whole house. Spruce up one inviting spot, maybe a candle on the table or a soft throw on the chair. A warm corner can lift the whole mood. 6. Build in Quiet Moments Even five minutes on the porch with a cup of tea can settle your spirit. Download an ebook to steal away and read. Get swept away to a small town and forget your troubles. You'll get more done in less time if you are not stressed as tight as a banjo string! Take a breath, look around, and let yourself enjoy the sweetness of the day. 7. Ask for Help Before You Need It You know that moment when everything boils over at once? Let’s skip it this year. Ask someone to carve the turkey or watch the rolls so you can breathe. Folks want to help, and there’s kindness in letting them. 8. Let Go of Perfection If the rolls brown a little too much or the table isn’t picture-perfect, it’s fine. Thanksgiving is about connection, not perfection. Some of the best memories come from the little mishaps. 9. Create a Simple Gratitude Ritual Invite everyone to share one thing they’re thankful for. It doesn’t have to be formal. Just a moment of honesty and heart can shift the whole atmosphere. There is a 7-day Gratitude Journal on my website. Here's the link to day one...do them one day at a time or binge-read them all at once. Your way! -> https://www.nancynaigle.com/post/7-day-gratitude-walk 10. End the Day on a Sweet, Simple Note A quiet walk, an easy movie, or a leftover turkey sandwich with loved ones… ending softly makes the whole day feel richer. Thanksgiving doesn’t have to drain you. With a simpler plan and a gentler pace, it can feel like a warm blessing instead of a marathon. Here’s to a holiday filled with calm hearts, grateful spirits, and plenty of joy around your table. I'll be posting a few quick and easy version recipes, coloring sheets, and inspirational messages on the blog until Thanksgiving. I hope they will inspire you. Hugs and thanks for being here with me.
